Recipe for Ultimate Chicken Quesadillas with pictures this time!

This is so good that we had it again last night and so this time I took pictures to show you.... Do you like Ro*tel? We do! At almost every holiday get together we have cheese dip with Ro*tel in it! We are nacho fanatics! So I thought we would try this neat recipe: Prep time:30 minutes Serves :4 people 1 quesadilla each Ingredients you will need: Pam (cooking spray) 1/2 lb of boneless skinless chicken breast, cut into 1/2 inch pieces 1 can (10oz each) Ro*tel mexican diced tomatoes with lime juice and cilantro undrained 4 flour tortillas (10 inch) 2 cups shredded cheddar and monterey jack cheese blend (we used colby jack thinly sliced shredded cheese since that is the kind we like) Directions: 1. Spray large skillet with cooking spray: heat over meduim heat. Add chicken and undrained tomatoes: cook for about 10 minutes, or until chicken pieces are no longer pink in the center and liquid has evaporated, stiring frequently. 2. I offered Laura an opportunity for me to read her book and write a review. She sent the PDF of it to me, I was so intrigued that I started it this morning and just finished. This book is 262 pages long. The summary of the story is : The “Phantom” was a musical phenomenon that Rebecca had always found enchanting. Do you like Ro*tel? We do! At almost every holiday get together we have cheese dip with Ro*tel in it! We are nacho fanatics! This is a letter from one of Fabulous Deals and Steals fans, Please help if you can: Hi my name is Michelle, i live in Middletown NJ. My home town has been directly devastated by Hurricane Sandy. I have been trying to get a few people whose blogs I follow for couponing to donate some stuff. Alot of people have lost everything, it's just hard to imagine that within a moment in time, you have nothing. I know so many people that have ,thankfully, evacuated, took items for a few days, only to return to their homes in shambles....some returning to no home at all. I have only been through Belford (my hometown) and Port Monmouth (where i work) and it's absolutely devasting...words can't even begin to tell the tale of what these people are going through...it looks like a war zone. The streets are lined with their personal items and debris from their homes. Trucks and cars are parked everywhere with people trying to help as much as they can, people are just , simply put, lost.
