Spicy Black Bean Salsa Recipe

This is another Ro*tel Recipe that was sent to me and is great just it is spicy! It's a spicy, colorful salsa made with balck beans, diced tomatoes with green chilies , corn, red onion (which can be left out if you don't like onions) and cilantro.


Ingredients:
*1 can ranch style black beans, drained and rinsed (15 oz)
*1 can Ro*tel original diced tomatoes and green chilies, drained
*1/2 cup whole kernel corn, frozen or canned does not matter which
*1/4 cup finely chopped red onion (again you do not have to use this)
*1/4 cup chopped fresh cilantro (we used the spice shakers though that you can buy at the store much easier)
*1 tbsp lime juice
*1/4 tsp ground cumin
*torilla chips, tacos or burritos optional
(we used it on all for Taco Tuesday)


Directions:
1. Stir together beans, drained tomatoes, corn, onion, cilantro, lime juice and cumin in medium bowl. cover and refrigerate 30 to allow flavors to blend
2. Serve with tortilla chips, tacos or burritos, if desired

Total time:45 min
Serves:12 servings at 1/4 cup each


This is a great alternative to regular jar salsa. We almost always have Ro*tel in the cupboard. If you want the best chip to just use it as a dip is Tostitos Scoops! You can really get a good amount on each chip for best taste results.
